The terroir of Amyndeon favors the cultivation and brings out the characteristics of both white varieties, such as Sauvignon Blanc and Rhoditis, as well as red varieties such as Merlot and Syrah. The combination of these cosmopolitan varieties with Xinomavro creates the distinctive character of the Eritimos series. The blend of Xinomavro with Syrah and Merlot in the Red Topaz results in a wine with a deep purple color. Its beautifully evolved aromatic bouquet exudes aromatic notes of red fruits like cherry and plum, sweet aromas of spices like vanilla, as well as chocolate. On the palate, you’ll find velvety tannins, full body, a balance of alcohol with acidity, and a long finish. The aromatic and flavor profile of the wine is enriched by its 12-month aging in French oak barrels.

- Production method: The grapes come from selected mountain vineyards in the Amyndeon area. The selection of grapes is based on their age and technological maturity during harvest. Pre-fermentation cold maceration of the grape pulp and slow controlled alcoholic fermentation are applied.
- Aging: Eritimos Topaz wine is aged for at least one year in oak barrels, followed by bottling.
