Eritimos Red Ruby, is a red dry wine reserve 100% Xinomavro. Eritimos contains deep magenta color with violet streaks, dried fruit bouquet and full rounded mouth with a lasting aftertaste.

  • Pre-fermentation processes: Pre-fermentative cold maceration of the grape must is applied. For optimum process conditions, the grapes are left for a few hours in a cooling chamber until the right temperature (12-15°C) is reached. Duration of the pre-fermentative maceration varies from 2 to 8 hours depending on the degree of ripening until the desired degree of aromatic extraction is achieved. Then, enzymatic leaching follows.
  • Alcoholic fermentation: Destemmed musts are inoculated with selected yeasts. Slow, controlled alcoholic fermentation takes place in stainless steel tanks featuring an automated heating-cooling system.
  • Post-fermentation processes: Stirring with fine lees, decanting, filtering.

  • Vineyard location: The PGI Florina wines come from vineyards within the administrative boundaries of the Prefecture of Florina. Specifically, the grapes for the Eritimos white wine are selected from grapevines in the municipal districts of Agios Panteleimon, Petres, Xino Nero and Vegora.
  • Soil composition: The vineyards selected for the white wines consist of sandy, sandy- clay soils, over calcareous formations (alluvial, older lake deposits), of light mechanical composition with good drainage.
  • Altitude: 600-650 m.
  • Vineyard age: The vineyards selected are 10 to 20 years old with controlled yields not exceeding 800-1000 kg/ha.
  • Method of cultivation: Integrated Farm Assurance (IFA).
  • Vine training system: Bilateral linear (Royat) pruning.
  • Grape harvesting season: 1st fortnight of September.
